Pinterest is full of interesting recipes using little cookie cups made out of sugar cookie dough. I recently hosted a baby shower for my new nephew, and decided to try whipping up something with a fall twist. I think they were a pretty big hit and they were super simple to make. Since I was traveling to Minnesota, it was convenient to make the cookie cups at home, transport them, and then assemble the cookie cakes when I got to my mom’s house. If you’re in a rush or looking to simplify it you can make the recipe using store-bought sugar cookie dough. You could make these even more festive for the holidays by adding cranberries, pears, or other seasonal winter fruit. Give these Holiday Fruit Cups a try!
INGREDIENTS
1 batch of sugar cookie dough (homemade or store bought)
1 large tub of cool-whip
1 block of cream cheese
2-3 cups of prepared fruit
1 tsp ground cinnamon
DIRECTIONS
Press the sugar cookie dough into a mini muffin pan and bake according to directions. Remove from oven and allow to cool completely. Make the whipped filling by mixing the cool-whip, cream cheese and cinnamon together until creamy. Add 1 teaspoon whipped filling to each cookie cup and then top with seasonal fruit of your choosing. If you’re making these in advance, you’ll want to keep them refrigerated or the whipped filling can make the bottom of the cookie soggy. I guarantee you can’t eat just one. Enjoy!
