Lunch. The forgotten meal. Breakfast is the most important meal of the day and meal planning is so important for dinner, but what about lunch? We are all looking for something simple, whether you work in or out of the home and this is a perfect option. It takes no longer than 5 minutes to put together and it is packed with flavor and nutrition. This would be a perfect meal to throw together when you’re having a quick lunch with a girlfriend or when you’ve got a super packed schedule.
Brown Rice Noodles with Cucumbers and Cilantro
serves 1 – easily adaptable
about 2 oz. brown rice noodles (try Happy Pho)
1/4 cucumber, thinly sliced
1/4 cup chopped cilantro
1 Tbsp. sesame oil
pinch of salt
Place your brown rice noodles in a bowl (they will expand so make sure the bowl is about double the size of the noodles). Pour boiling water to cover the noodles and let sit 5 minutes until the noodles are tender.
Meanwhile, chop your cucumber and cilantro and find your sesame oil. Sesame oil has so much flavor so it is really imperative for this meal.
When the noodles feel tender (you can totally taste one to make sure), drain them and toss them with the cucumber, cilantro, sesame oil and a little pinch of salt to taste. Feel free to be super cute by pairing this with a cold glass of cucumber water.
