Holiday parties should be fun, not stressful and finding party food that is easy to put together is key. I am all about setting out some cheese, nuts and a bowl of popcorn, but I also like to have at least one homemade item when I have guests. This flatbread really could not be easier and you can make it a couple of hours ahead of time and serve it at room-temperature. Bonus! And I think it seems a little fancy too- those pomegranate seeds look like little holiday jewels adorning your flatbread. The flatbread is both savory and sweet and would pair perfectly served with our Cranberry + Orange Martinis (recipe here)!
Ricotta, Pear & Pomegranate Flatbread
1 ball of pizza dough, homemade or store-bought
Whole-milk ricotta cheese
1 pear, thinly sliced
Pomegranate seeds
Honey
Preheat an oven to 450F and set a baking sheet inside to preheat as well.
While the oven is preheating, lightly dust a counter with some flour and roll out your pizza dough. I just spread it to a medium thinness with my hands and that worked perfectly. Don’t worry about making a perfect circle or square. (We don’t want to go too thin here so that it doesn’t break when we transfer to the baking sheet)
When the oven + baking sheet have preheated for about 20 minutes, lightly grease the baking sheet with olive oil and carefully place the pizza dough on the sheet. Bake the dough for 5 minutes, check and rotate the pan. Bake for another 3-5 minutes, keeping an eye on it so that it doesn’t burn.
Take the dough out of the oven and spread with a layer of ricotta cheese- as much or as little as you want- we just covered it thinly. Next, place the sliced pears on top and sprinkle with pomegranate seeds (again, however many you want!). Drizzle with honey and slice the flatbread. Enjoy!
